EASTER EGG CAKE 2 packages chocolate mint cake mix 1 tablespoon nnCavored gelatin cop sugar 13 cup water 1 pint fresh strawberries 1 cup heavy cream, whipped 2 packages fluffy. white frost tng mix Prepare cake mixes accord tag to directions on package for mixing. Divide batter into two greased and floured 2ft-quart oval-shaped casseroles. Bake in a preheated oven 325 degrees for 50 minutes, or until cake tests done.

Cool 10-15 minutes, then turn out on rack to cooL Cut each cake in half lengthwise to form 4 layers. In a small saucepan combine the sugar and gelatin and stir ih the water. Crush half the strawberries and add to the gelatin mixture. Bring to a boil and simmer for 5 minutes. Add remaining strawberries and cool until slightly thickened.

Fold into the whipped cream, and chill until firm. Spread strawberry filling between the cake layers and sandwich the 2 layers together, bottom sides together, to form and resemble egg shape. Prepare frosting mix accord log to directions on package. Frost and decorate the egg to resemble an Easter egg. The frosting may be divided and tinted any desired color.

Serves 12. (To make a smaller egg cake, use only one package of cake mix and one package of frosting mix. Prepare as for large cake.)
